WHAT IS SAKE KASU?
When sake is brewed, the fermented rice mash is pressed to separate the liquid sake. What remains behind is a soft, fragrant paste called sake kasu, or sake lees. In Japan, it has long been used in home cooking for soups, marinades and pickles, valued for its deep, savory and slightly fruity flavor.
WHY WE USE IT
We wanted Essential Furikake to have real depth of flavor without added MSG or sugar. Sake kasu brings a naturally rich, savory umami that pairs beautifully with our nori and toasted sesame for a blend that’s full of flavor and beautifully balanced.
We partner with Nova Brewing in Southern California to give their wet sake lees a second life. We carefully dehydrate them in our own facility, transforming this remarkable ingredient into a dry seasoning that brings something special to every sprinkle.
